RECIPE: The best sugar free banana bread from @jodiedailybakes

No sugar banana bread

Ingredients 

  • 1/3 cup Coconut Oil
  • 1/3 cup Honey
  • 2 Eggs
  • 1 cup Mashed Banana (about 2.5 bananas)
  • 1/4 cup Milk
  • 1 tsp Baking Soda
  • 1 tsp Vanilla Extract
  • 1/2 tsp Salt
  • 1 3/4 cup White Whole Wheat Flour
  • 1 tsp Cinnamon
  • 1/2 cup Nuts/Seeds/Chocolate/Dried Fruit (optional)

Preheat the oven to 170° and line a 9 x 5" loaf tin.

Whisk the coconut oil and honey together (if your coconut oil has solidified, place it in  warm place for a while).

Add the beat and beat.

Add mashed banana, vanilla and milk. (again if the mixture solidifies, place it in  warm place for a while).

Add baking soda, salt and cinnamon. 

Whisk in the flour.

Add any of the additional items now if you are using them.

Pour into tin. Cut slice of banana length ways and gently place on top. Lightly sprinkle with brown sugar.

Bake for 55 -60 minutes or until a skewer comes out clean. Cool in tin for 10 minutes, then remove and place on wire rack.

Keep in the fridge for up to 3 days. You can also freeze it.The best thing to do is slice it up once its cool, then wrap it up well in cling film. That way you can take out a single slice (ahem) and toast it.
