RECIPE: GREEN LENTILS AND WHITE FISH

So we are back on the seafood train... for the most part anyway. Here is a delicious and easy recipe for lentils and pan fried fish. Lentils are low in calories with a high protein content, perfect if you want to watch the waistline, but like feel like you've actually eaten something!
INGREDIENTS: (serves 2)
- 1/2 Cup Green lentils
- 1 Cup Water
- Handful Spinach Roughly Chopped
- 1/4 Cup Coriander Roughly Chopped
- 2 Cloves Garlic Finely Chopped
- 1/2 Lemon
- 1 tsp Cumin
- Salt & Pepper
- Filet of Fish
- Olive Oil
- 1 tbsp Butter
- 2 tbsp Balsamic Vinegar
Rinse the lentils in water, removing any rocks or shriveled lentils. Add to pan with water and bring to a boil, then reduce heat to a simmer.
Cook lentils uncovered for 20-30 minutes, adding water if necessary. Make sure lentils remain just covered with water.
Once cooked, lentils should be tender, but not too soft, you don't want mushy lentils. Drain the lentils and place back in the pan.
Season with salt and pepper. Add lemon, vinegar and olive oil. Stir well.
In a frying pan, gently fry garlic in a little oil on a medium heat. Don't let it burn. Add lentils, spinach and cumin and stir for a minute.
Remove from the heat and transfer to a bowl. Add chopped coriander. Set aside.
Take your piece of fish and season with salt and pepper. Pan fry lightly in olive oil. and a tablespoon of butter.
Plate fish on top of a bed of lentils. Serve with a wedge of lemon.
