RACHEL'S RECIPES - EVERYTHING GREEN SALAD

Everything green salad

Ingredients
  • Leaves (spinach, butterhead, rocket)
  • Sprouts
  • Cucumber
  • Sugar snap peas
  • French beans
  • Edamame
  • Pumpkin seeds
  • Sunflower seeds
  • Black + white sesame seeds

For the dressing

  • 1 avocado
  • 2 cups greek yoghurt
  • 1 garlic clove grated
  • ¼ cup fresh parsley
  • 2 Tbsp of lime juice
  • 1 Tbsp olive oil
  • Salt + pepper

 

Quite honestly, you’re at liberty to put anything your heart desires in this salad, so long as it’s green! This is how I prepared mine, quick and easy.

Bring some water to a rolling boil and add a pinch of salt. In the meantime prepare your beans and ‘string’ or ‘devein’ your sugar snaps peas. Once the water is boiling pop in the beans and sugar snaps and cook for 30seconds to 2 minutes depending on taste. Do the same with the edamame.

Put ½ tbsp of olive oil in a bowl along with some salt + pepper then add all you’re leaves and everything else except for the seeds, toss well. To make the dressing blend all ingredients in a blender, season well.

Plate your salad drizzle with nice amount of dressing sprinkle over your seeds and bob’s your uncle!
